🌿 Vineyards and Terroir
The vineyards extend over حوالي 2.5 hectares at altitudes between 200 and 300 meters, with south-west exposure.
The soils are sedimentary, rich in marine fossils, pebbles, and limestone—ideal for imparting complexity and minerality.
🏗 Vinification and Aging
Manual harvest between September and October with grape selection.
Fermentation in stainless steel with indigenous yeasts for about 20 days at controlled temperature (15–20°C).
Spontaneous malolactic fermentation.
Aging in stainless steel before bottling.
