Harvest: The grapes are harvested by hand in multiple passes, in order to highlight the different expressions of the grape variety. When needed, harvesting may also take place during the night.

Vinification: Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. A small portion of the grapes undergoes brief maceration on the skins, while the majority is directly pressed at harvest for white winemaking. After fermentation, around 40% of the wine is aged in egg-shaped stoneware vessels (6 to 10 hl) on fine lees for at least 6 months. The remaining 60% is aged in stainless steel.
