The artisan pistachio panettone is one of the most indulgent expressions of Italy’s traditional leavened baking.
Created by Gabriele Rocchi, it is made through a 72-hour artisanal process, divided into three production phases, with four carefully controlled fermentation stages and two separate doughs, ensuring a soft, light and perfectly airy structure.
Inside, it is enriched with creamy pistachio praline cubes, made with pure pistachio paste and white chocolate, delivering a smooth texture and an intense, indulgent flavour.
The top is covered with a pistachio glaze and crunchy granules, adding texture and enhancing the aromatic profile of the nut, creating a perfect balance between softness and crunch.
