Harvest: The grapes are harvested by hand in multiple passes, in order to highlight the different expressions of the grape variety

Vinification: Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, with a maceration of about 20 days without stems, depending on the vintage. This is followed by complete malolactic fermentation.

The wine is aged in new 500 L oak barrels, with gentle toasting to preserve the varietal character.

Aging: 6 months in bottle
